Oka Classique is made from specially selected cheese wheels that are aged for over 60 days in the original cellars of the Cistercian Abbey located in Oka. This extended ripening period as well as the additional washing of its rind add to its maturity and give Oka Classique its pungent taste and characteristic aroma.
