Festive turkey with OKA sauce

Si vous n'avez pas de OKA, vous pouvez le remplacer par du : OKA Classique ou du OKA L'Artisan
Sauté shallots and nuts in butter in a pan for approximately four minutes over medium heat, stirring occasionally. Pour in broth, cider, brown sugar, nutmeg, cinnamon and salt. Mix well. Cover and let simmer gently for 30 minutes. Slice cheese into sticks. Add cheese and cream to sauce. Stir constantly for five minutes over low heat using a whip. Add thickener to taste. Prepare caramelized apple segments as a garnish by browning apples in butter and brown sugar. Serve sauce hot over turkey slices
- 6.5 ounces (180 g) Oka cheese
- 1 tbsp (15 mL) butter
- 2 tbsp (30 mL) French shallots, finely chopped
- 1/2 cup (125 mL) pecan nuts, finely chopped
- 2 cups (500 mL) chicken broth
- 3 cups (750 mL) apple cider
- 1/2 tsp (2.5 mL) ground cinnamon
- 1/2 tsp (2.5 mL) ground nutmeg
- 1 tsp (5 mL) salt
- 1 tbsp (15 mL) brown sugar
- 1/2 cup (125 mL) old-fashioned
- 15% cream
- Sauce thickener, to taste
